The Chinese character for “heat” symbolizes the energy, vitality and vivacity embodied by this upscale Old Town eatery. Chef and owner Kee Chan uses only the freshest ingredients in his uniquely non-traditional approach to sushi and fine Japanese cuisine. Not to be missed are the on-site aquariums that hold live fish slated for “fresh-kill” presentation. Skilled sushi chefs select and prepare these ultra-fresh seasonal offerings before your eyes. Elaborate multi-course meals are the only way to dine here; prices range from $45 for seven chef-selected courses to $100 and up for more premium and exotic fare. A polite and knowledgeable staff, hand-picked wines and sakes, and an elegantly chic interior all help make Heat a sophisticated and intimate place to dine.- April 2005
